Tamales

Ingredients:

  • 20 Chile Guajillos

  • 6 Chile de Árbol

  • 2 Chile Pasilla

  • Bay leaf

  • Whole White Onion

  • 3-4 pounds of Pre-made Tamale Masa 

  • 3 pounds of Pork

  • Salt to taste

  • 1/4 teaspoon Cumin

  • 3-4 cloves of Garlic

  • 1 bag of Corn Husks (pre-soaked)

  • 1 tablespoon Lard

Tamales are a traditional food of Mexican culture. They are typically eaten for Christmas. The most common tamales are red with pork or green with cheese, but there are also sweet tamales with raisins.

Steps:

1. Boil pork, bay leaf, onion, salt in a pot until cooked well 

2. Seperatly boil chiles and garlic

3. Once cooled, blend chiles with pork water. Strain until it is the sauce and add salt to taste

4. Let pork cool and then shred or cube

5. Knead the premade masa, adding lard and salt. Masa must be smooth and not too sticky. (usually 10 minutes)

6. Add pork to the sauce, and add additional flavors like salt and garlic if needed

7. Take a corn husk and spread 1-2 spoonfuls masa to the wider half of the husk 

8. In the middle, add a spoonful of pork sauce to the center of the husk then fold each side in and bottom-up, making an envelope

9. Repeat and store tamales together facing up (freeze until ready to use)

10. Steam tamales in a large pot inside a steamer with water underneath (may take 1-2 hours to cook)

11. Serve hot and Disfruten!
