
Mole

Ingredients:

4-8 Chicken Thighs

4 Chile Guajillo

1 Chile Pasilla

4 Chile de Árbol
-
1 Tomato
-
Olive Oil
-
1/4 Onion
-
4 ounces Doña Maria Mole Sauce (half jar)

1 Tomato
-
1 barra de Chocolate Abuelita
-
½ teaspoon Garlic Powder
-
½ teaspoon Salt
-
½ teaspoon Red Chile Powder
-
1/4 teaspoon Cumin
-
½ teaspoon Allspice Powder
-
1 tablespoon Peanut Butter or Almond Butter
Mole is one of the most famous and unique dishes of Mexico. Mole can be made in many different ways, but it is a sauce that usually accompanies chicken. The sauce incorporates chocolate and chile. This mix of flavors allows for a sweet and spicy blend that overwhelms the taste buds with pleasure.
Steps:

Clean chicken and boil for an hour (add salt and onion for flavor)
*Note: Save the broth, it will be used a few times throughout the recipe*

Clean and de-seed chiles, add them to boil with tomato

Add half of the mole base to bowl, mix in spices and chocolate

Take out chiles and tomato and blend with 3 cups of chicken broth

Strain blended liquid to remove chile skins and seeds

Combine blended liquid with mole mix and add medium heat on the stove

Stir until both are blended together and lower heat and keep stirring.
*Note: it may seem to liquidy at first, after a while on the heat it will thicken, but you can add half a tablespoon of Masena to thicken* ​
